- 1Preheat oven to 375°F (190°C) and prepare a parchment-lined baking sheet.
- 2Puree 1 cup cottage cheese in a blender or food processor until smooth.
- 3In a large bowl, mix the pureed cottage cheese, 1 egg, self-rising flour, and salt. Stir until a slightly sticky dough forms; add a little more flour if needed for easier handling.
- 4Divide dough into 6 pieces. Roll each into an 8-inch rope, shape into a ring, and pinch the ends to seal. Place on baking sheet.
- 5Whisk remaining egg with 1 tablespoon water. Brush each bagel with egg wash, then sprinkle with toppings.
- 6Bake bagels for 22-25 minutes until golden brown. Cool 10 minutes on the pan before serving.
