- 1Boil pasta in salted water according to package directions; drain and rinse under cool water.
- 2Heat olive oil in a skillet or grill pan over medium-high. Add corn and sauté until lightly charred, 5–7 minutes. Cool slightly.
- 3In a large mixing bowl, whisk mayonnaise, crema or sour cream, lime juice, minced garlic, smoked paprika, cumin, salt, and pepper.
