- 1In a large bowl, combine warm water, sugar, and instant yeast. Let stand for 2-3 minutes.
- 2Add flour, kosher salt, and 2 tablespoons olive oil. Mix until a shaggy dough forms.
- 3Knead the dough on a floured surface for 5 minutes until smooth and elastic.
- 4Place dough in an oiled bowl, cover, and let rise in a warm area until doubled, about 1 hour.
- 5While rising, mix garlic with 2 tablespoons olive oil and grate Parmesan.
- 6Drizzle a 9x13-inch pan with olive oil and press dough in, stretching to corners.
- 7Dimple dough with fingertips. Spread half the garlic oil and sprinkle all the Parmesan over the dough. Top with parsley if using.
- 8Let dough rest 15-20 minutes. Meanwhile, preheat oven to 425°F (220°C).
- 9Bake 22-25 minutes until golden and crisp. Immediately brush with remaining garlic oil and sprinkle with flaky salt. Cool slightly and serve.
