    Cook the noodles in a large pot of boiling salted water according to package directions until al dente. Reserve 1/4 cup pasta water, then drain.

    While noodles cook, heat neutral oil in a large skillet over medium heat. Add minced garlic and cook, stirring, for 30–60 seconds until fragrant.

    Reduce heat to medium-low. Stir in soy sauce, toasted sesame oil, honey (or maple syrup), rice vinegar, sriracha (if using), and black pepper. Add reserved pasta water.

    Toss cooked noodles, green onions, and half of the sesame seeds into the sauce. Use tongs to mix until noodles are evenly coated.

    Divide into bowls and top with extra green onions and sesame seeds. Serve hot!
