    Preheat your oven to 400°F (200°C). Lightly butter a 2-quart baking dish.

    Cook the pasta to al dente in salted boiling water according to package directions, then drain.

    In a skillet, melt 1 tablespoon butter over medium heat; add chopped kimchi and sauté for 2-3 minutes until fragrant. Remove from heat and set aside.

    In a large saucepan, melt the remaining 1 tablespoon butter. Whisk in flour and cook, stirring, for 1 minute. Gradually add milk while whisking. Add gochujang, kimchi juice, garlic powder, onion powder, salt, and pepper. Cook, whisking, until just thickened, 4-5 minutes.

    Add shredded cheddar and Monterey Jack cheeses in batches, stirring until melted and smooth.
