    Grate zucchini (no need to peel). Squeeze out excess liquid using a clean towel.

    In a large bowl, whisk eggs, brown sugar, and oil until well combined. Stir in vanilla and zucchini.

    In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
