- 2Grate zucchini (no need to peel). Squeeze out excess liquid using a clean towel.
- 3In a large bowl, whisk eggs, brown sugar, and oil until well combined. Stir in vanilla and zucchini.
- 4In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- 5Fold dry ingredients into wet mixture until just combined. If using, gently stir in nuts.
- 6Pour batter into prepared loaf pan and smooth the top.
