Breakfast Baked Potatoes are a hearty, customizable morning dish packed with crispy bacon, fluffy eggs, and gooey cheese—perfect for busy mornings or brunch!

    Preheat oven to 400°F (200°C). Scrub potatoes, prick with fork, rub with olive oil and salt.

    Bake potatoes directly on rack or baking sheet for 40-45 minutes, until tender.

    While potatoes bake, cook bacon in skillet until crispy; cool and crumble.

    Let baked potatoes cool slightly, then cut slit in top and scoop out most of the flesh. Save in bowl.

    Mash potato flesh with 1 tablespoon butter, half the bacon crumbles, half the cheese, salt, and pepper.

    Fill potato shells with mashed mixture, making a well in center. Crack 1 egg in each well.

    Sprinkle with remaining cheese, bacon, and dot tops with remaining butter.
